Description
It’s easy to make and requires very little cooking for this Chinese Cold Sesame Noodles. They make a great appetizer or side dish and can be made into a substantial main course by adding a source of protein like chicken or shrimp. I’d even recommend these for meal prep as they last 4-5 days in the fridge!

Ingredients
- 6 oz. whole-grain spaghetti
- 2 tbsp sesame oil, divided
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 2 tsp brown sugar or honey
- 2 tsp peanut butter
- 1 carrot, julienned
- inch piece ginger, peeled and minced
- 2 scallions, chopped
- 1 tbsp sesame seeds
Instructions
- First, cook the spaghetti according to the own package directions for al dente. Rinse the noodles under cold water and toss in 1 tbsp of sesame oil to prevent the noodles from sticking.
- Second, in a small bowl, combine the remaining 1 tbsp of sesame oil, the soy sauce, vinegar, brown sugar, and peanut butter, mixing well.
- Pour the mixture over the noodles then add the carrot, ginger, scallions, and sesame seeds, tossing to combine.
- Serve chilled.
